Revolutionizing Low-Carb Dining with nuPasta

For many, the thought of adhering to a low-carb diet conjures images of giving up beloved comfort foods, especially pasta. The rich, diverse world of pasta often feels incompatible with dietary restrictions. However, I’m thrilled to introduce you to a game-changer: nuPasta. This innovative pasta alternative is transforming how we approach low-carb and gluten-free meals, making them not only possible but incredibly enjoyable.

When I first encountered this low-calorie, high-fiber, and undeniably gluten-free pasta, I was skeptical that it could truly be low-carb. My curiosity was piqued, and upon further investigation, I discovered the secret behind its remarkable nutritional profile.

The Konjac Plant: The Secret to Guilt-Free Pasta

The magic of nuPasta lies in its primary ingredient: the root of the konjac plant. Unlike traditional wheat pasta, konjac contains no starch, making it inherently low in carbohydrates. This unique composition is also why nuPasta is incredibly low in calories. Imagine: each package boasts a mere 25 calories while providing an impressive 6 grams of dietary fiber. This combination is truly exceptional for anyone looking to manage their weight or improve their digestive health without sacrificing their favorite pasta dishes.

nuPasta offers a versatile range of shapes to suit any recipe, including spaghetti, fettuccine, and angel hair. Its growing popularity means you can now find nuPasta readily available in the pasta or health food aisles of over 500 stores across Canada, making it accessible for your next culinary adventure.

Convenience Meets Culinary Excellence

One of the most appealing aspects of nuPasta, beyond its health benefits, is its incredible convenience. It comes pre-cooked, which is a dream come true for crafting quick and easy meals on busy weeknights. The preparation couldn’t be simpler: just open the package, drain, and rinse with cold water for about 10 seconds. Once rinsed, it’s ready to be warmed through with your favorite sauce. This pasta seamlessly adapts to almost any sauce you can imagine, from a creamy Alfredo or a rich tomato sauce to a vibrant basil pesto or a decadent four-cheese blend. And, as you’ll soon discover, it pairs absolutely perfectly with my homemade Sun-dried Tomato Pesto.

Crafting the Irresistible Sun-Dried Tomato Pesto

My recent obsession has been this sun-dried tomato pesto. Its vibrant flavor and incredible versatility have made it a staple in my kitchen, much to the delight of my family. Even my son, often a discerning eater, couldn’t get enough of it. The beauty of this pesto lies in its simplicity and profound taste. All it takes is a minute or two in a food processor to transform a handful of fresh ingredients into a rich, aromatic sauce that elevates any dish.

While traditional pesto often calls for pine nuts, I intentionally omitted them in this recipe. The intense flavor and naturally thick texture of the sun-dried tomatoes provide ample body and richness to the pesto, making additional nuts unnecessary. If you prefer a slightly thinner consistency, simply add about ¼ cup of water during processing until it reaches your desired texture. This pesto has inspired several other delightful creations in my kitchen lately, including Sun-Dried Tomato, Spinach, and Cheese Stuffed Chicken, Sun-dried Tomato Pesto Cauliflower Salad, and Sun-dried Tomato Pesto Shrimp Asparagus Skillet, so this pasta dish was a natural and delicious progression!

The Hearty Addition: Italian Sausage

To transform this delightful pasta and pesto into a complete, protein-packed meal, I incorporated fresh Italian sausage. The savory, slightly spicy notes of the sausage perfectly complement the sweet and tangy sun-dried tomato pesto. Preparing the sausage is quick and easy: simply sauté it with a touch of olive oil in a non-stick skillet until it’s beautifully browned and cooked through, which typically takes less than seven minutes. This method ensures maximum flavor development and keeps the cooking process efficient.

Once the sausage is cooked, the magic truly begins. I then added the rinsed nuPasta directly to the same skillet, allowing it to soak up all those delicious pan drippings. Next, a generous portion of the homemade sun-dried tomato pesto was stirred in. Everything was mixed thoroughly to ensure every strand of pasta and every piece of sausage was coated in the rich, aromatic sauce. A final flourish of fresh parsley and grated Parmesan cheese before serving adds brightness and an extra layer of savory goodness, making this dish an absolute culinary triumph.

This Italian Sausage Sun-dried Tomato Pesto Pasta is loaded with flavor. And you won’t believe this recipe is actually low-carb and gluten-free!

Ingredients

For the Sun-Dried Tomato Pesto

  • 3 garlic cloves
  • 1 cup fresh basil
  • 1 cup sun-dried tomatoes packed in olive oil
  • 2 tablespoons olive oil
  • ½ cup Parmesan cheese

For the Sausage

  • 1 teaspoon olive oil
  • 4 small fresh Italian sausages sliced

For the Pasta

  • 2 packages nuPasta Angel Hair
  • 2 tablespoons shredded Parmesan Cheese
  • 1 teaspoon fresh parsley chopped

Instructions

  • In a food processor, combine all ingredients for the sun-dried tomato pesto. Process on low for approximately 1 to 2 minutes until smooth. Set aside.
  • Heat olive oil in a skillet. Add the sliced Italian sausages and sauté until they are fully cooked through and nicely browned.
  • Drain and thoroughly rinse the nuPasta Angel Hair with cold water for about 10 seconds.
  • Add the rinsed pasta and 6 tablespoons of the prepared sun-dried tomato pesto into the same skillet with the cooked sausages. Mix everything together thoroughly to ensure the pasta and sausage are well coated.
  • Gently heat the mixture for about 1 minute, allowing the flavors to meld.
  • Before serving, garnish the pasta with additional shredded Parmesan cheese and fresh chopped parsley.

Notes

  • For the best flavor and melt, I highly recommend using freshly grated Parmesan cheese over pre-grated varieties.
  • If you enjoy a bit of heat, opt for spicy Italian sausage to add an extra kick to your pasta.
  • To store: Any leftover pasta can be stored in an airtight container in the refrigerator for up to 3 to 4 days, making it perfect for meal prep.
  • To reheat: Reheat leftovers easily in the microwave for a quick meal, or gently warm them on the stovetop over low heat.
  • To freeze: This dish also freezes well. Place cooled leftover pasta in a freezer-safe container or bag, and it will keep in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Pesto consistency: If your pesto is too thick, add a tablespoon of water at a time until it reaches your desired consistency. For a richer pesto, a drizzle of extra olive oil can be used instead of water.
  • Vegetarian option: For a delicious vegetarian version, simply omit the Italian sausage and add some sautéed mushrooms, bell peppers, or zucchini for extra texture and flavor.
  • Nut-free pesto: Since this recipe already omits pine nuts, it’s naturally nut-free, making it suitable for those with nut allergies.
